Rib Recipe for Mother's Day

It's Mother's Day weekend, and grills across America are going to be fired up to show appreciation for the special ladies out there we all know and love...our Moms.

One of the best ways to show Mom you care is with a tasty home cooked meal, and this time of year that means cooking food on the grill. If you're looking to go beyond the ordinary hamburgers and hot dogs, you'll love this easy recipe and technique to make succulent ribs that fall off the bone!

Preheat oven to 200*. Coat one 2-1/2 to 3 lb. rack of baby back or St. Louis ribs evenly with thin layer of olive oil. Sprinkle meat with a quick dry rub mixture of salt, pepper, garlic powder, oregano - all to taste. Distribute rub evenly over both sides. Seal ribs completely in foil.

Place in a large casserole and bake at 200* for at least 3 hours (longer is OK.)

After 3 hrs. remove foil. Work gently because the ribs will be nearly fall-off-the-bone tender. Place ribs on your grill rack directly above the coals or fire. Grill & sear bone side down for three minutes (grill lid off). Turn the rack over and sear the meaty side for 3 minutes.

Move ribs to cooler side of grill & baste with Outta The Park BBQ Sauce. Turn ribs over and baste other side with sauce (meaty side now facing up). Cover grill & cook for another hour at low temperature (between 225 to 300 degrees) & smoking with soaked hickory pieces and/or rosemary sprigs (if desired). Check at least once during hour and baste with sauce if needed.

Let ribs rest 10 minutes off the heat and then serve with a side of Outta The Park dipping sauce. Goes great with cole slaw, corn on the cob, potato salad, baked beans and more!
