Simple Kale Salad Recipe - Just 4 Quick & Easy Ingredients!

"Eat your vegetables, and make sure you include lots of leafy greens."

We've all heard that many times, right? That dark greens are loaded with B vitamins and you can't get enough of those. So several years ago before we ever had a BBQ sauce our family got serious about eating real food and about supporting local farmers. We joined a CSA (community supported agriculture), and we started getting more greens than we knew what to do with.

We had collard greens, rainbow chard, green chard, bokchoy, tatsoi, beet greens, turnip greens, mustard greens, spinach and kale. Figuring out what to do with all those greens was a challenge and admittedly many times we ate the beets and composted the greens shall we say.

One great recipe that came to us via another mom on a mission to feed her family healthy, nutrient dense foods was this super simple and delicious 4 ingredient recipe for Quick and Easy Kale Salad.

This kale preparation is a staple in our house, and it's one that all 3 of our kids eat happily and without complaints. It's so easy to make it's hardly a recipe at all. The picture says it all but for those who like more specifics when it comes to recipes I've shared them below:

Quick & Easy Kale Salad

4 Simple Ingredients: Kale, Olive oil, Lemon Juice & Sea Salt


1) Rip 1 bunch of kale leaves into bite size pieces and discard center stem.
2) Place in bowl and drizzle with olive oil and the juice of 1/2 a lemon
3) add sea salt - approx 1/4 teaspoon
4) toss ingredients to coat kale and then scrunch kale* in your hands for 5-8 minutes.
5) Adjust oil, salt and lemon juice to taste and adjust amounts based on the volume of kale you have to work with.

*The scrunching action is a very important step that allows the acid in the lemon juice to tenderize the leaves and make them much more pleasant to chew.
