Recipe from Full Belly Sisters ~ Slow Cooker Pulled Chicken w/Veggie BBQ Sauce

We had the pleasure of connecting with Justine Fontinell of Full Belly Sisters during our Feed Your Crowd Pinterest contest last summer. Justine's grilled zucchini picture won her a prize that included an gift certificate and some Outta the Park BBQ Sauce.

Imagine our delight a few weeks later to find this amazing picture and the recipe that goes with it shared on our Facebook page! We think this “Slow Cooker Pulled Chicken with Veggie BBQ Sauce” is a huge hit – for a lot of reasons.

What Makes this Recipe So Special? First of all we are big fans of low and slow cooking, and crockpots enable busy families like ours to prepare and eat healthy meals made at home. So between the gorgeous sandwich picture on this page and the very crockpot nature of the dish, she “had us at hello.” But there is something even more appealing about this recipe that makes us love it even more.

It contains LOTS of fresh, grated vegetables added to the pot along with barbecue sauce! My kids will tell you that it is my mission as a mom to “sneak” healthy foods into recipes whenever I can; so, of course this Full Belly Sisters approach won high marks with me!
