Outta The Park Chicken & Bok Choy Stir Fry

Outta The Park Chicken and Bok Choy Stir Fry

1 T olive oil
4 6-oz boneless chicken breasts cut in thin, 2” strips (1 inch pieces)
Kosher salt and black pepper
4 heads baby bok choy cut in ½” strips and halved (quartered lengthwise)
1 T low sodium soy sauce (1/4 C)
¼ C Outta The Park BBQ Sauce
4 scallions thinly sliced
½ can thinly sliced water chestnuts cut in half

--Heat oil in large skillet over med-high heat. Season chicken with 1/4 tsp salt & pepper and cook, tossing occasionally until browned and cooked through, 4—6 min. Transfer to a plate

--Add the box choy and ¼ C water to skillet. Cover and cook until the bok choy is just tender, 3 min.

--In a small bowl, combine the soy sauce, Outta The Park BBQ Sauce, and scallions. Add to the skillet and bring to a boil. Return the chix to skillet and cook, tossing until heated through, 1—2 min.

--Serve over brown rice
