Hash Brown Sweet Potatoes with Rosemary Recipe - YUM!

I picked up some beautiful sweet potatoes last week at my local farmers market and instead of doing what I always do with them - bake and serve with butter - I was inspired to make them seasoned with a bit of Outta The Park BBQ Sauce. Since they turned out pretty tasty and all 3 of my kids cleaned their plates, I thought I'd share my recipe for Outta The Park Sweet Potato Hash Browns with Rosemary.

Here's what you need for this simple recipe:

- 1 TBS Butter
- 1 TBS Olive oil
- 2-3 medium to large sweet potatoes (peeled and diced into small cubes)
- salt & pepper to taste
- 1 sprig of fresh rosemary
- 2-4 TBS of Outta The Park Original BBQ Sauce


1) Boil pot of water with enough water to cover your potatoes plus about an inch
2) peel and dice sweet potatoes
2) parboil the diced potatoes for 5-7 minutes
3) strain water from potatoes in colander
4) On stovetop add 1 tablespoon of butter to saute pan and heat to medium. When butter foams add oil, mix well and then add potatoes, salt and pepper to taste and keep potatoes moving in the pan until well coated. Add rosemary sprig and more butter/oil if needed to coat/cook the potatoes.
5) Add Outta The Park BBQ Sauce to thinly coat and flavor potatoes. Cook and stir a bit more. Test the potatoes for doneness and when they are tender to your liking serve and enjoy!

That recipe looks and sounds awesomely delicious! It combines three of my favorite ingredients: Sweet potatoes, rosemary, and your BBQ sauce :-) But being a chilehead, I'll probably use the hot & spicy version of Outta the Park. Looking forward to making this!
