Easy Oven Roasted Ribs - Perfect Every Time!

Preheat oven to 220°. Coat one 2-1/2 to 3 lb. rack of baby back or St. Louis ribs evenly with thin layer of olive oil. Add a splash (1-2 tbs) of apple cider vinegar and rub onto meat. Sprinkle both sides of ribs with a quick dry rub mixture of salt, pepper, garlic powder, oregano and paprika - all to taste. Distribute spice mix evenly over both sides using your hands to rub spices into the meat. Seal ribs completely in foil.

Place in a large casserole dish and bake at 220° for 3-3-1/2 hours. Note - using a dish is important to catch any juices that come out of the foil.

After 3 hrs. check to see if ribs are sufficiently cooked and cook longer if needed. When ribs are done, pour off juices and remove foil. Work gently because the ribs will be nearly fall-off-the-bone tender. Turn up oven to 350° and allow ribs to rest for 5 minutes while the oven heats up.

Sauce both sides of ribs and return casserole dish to hotter oven with ribs bone side down, meaty side up. Cook uncovered for an additional 15-20 minutes. This will set and lightly caramelize the sauce without burning it.

You can remove from oven at this point or optionally if you desire additional browning, you can set the oven to broil and broil ribs for a couple of minutes watching closely to make sure the sauce doesn't burn.

Let ribs rest for 5-10 minutes before you cut and serve. Serve with extra Outta The Park BBQ Sauce for dipping.
