Fall is here and the chill in the air has us inspired to get back in the kitchen and cook some of our favorite Big Batch recipes. At Outta The Park, we are big fans of the "Cook Once and Eat All Week" approach to cooking, so we like to spend some time on the weekends cooking big.

This summer is proving to be a great season for peppers in NC. We picked up some juicy sweet red ones at our favorite farmer's market last weekend, and these were so delicious we saved the seeds to plant them and grow our own next summer.
This recipe has been a family favorite since I was a little girl. The combination of fresh sweet potatoes and crushed pineapple topped with a slightly crunchy blend of a favorite cereal and pecans makes me long for Thanksgiving year round. We hope your family will enjoy this recipe as much as we do.
