The secret to this recipe is to cook your carefully rolled up and secured with a toothpick meat until it is almost all the way cooked...waiting oh so patiently to add sauce near the end of your cook time.
By waiting until the last 10-15 minutes of your cook time, you'll minimize the char that results from burnt sugars. And the result is that suculent, juicy saucy look and taste that everyone loves.
